I personally use a quart canning jar to "brew" my infusions, but in the morning, I pour the whole batch into a big French Press, and just push the plunger to strain, just as you would when making coffee. Takes about a minute, max. Much later, After work, I can come home and clean out the F...

Generally, when I've used paper bags to dry and store some herbs, I just fold/roll down the top tightly. (did you ever buy bulk coffee beans? you know how those bags fold down and have bits of stiffer wires to fold over and keep shut? Kinda like that. :) Since you are storing, not drying it yourself...
